The Mortlake Flour Mill was established by George Bostock in 1856 as a three storey squared rubble bluestone structure of utilitarian design. In 1857 Warrnambool builders Aikman, Hamilton and Geddes purchased the wind-powered mill, installed a steam engine and erected the impressive square plan stone chimney. Built on the banks of the Coliban River in 1861 by the Blyth Bros. It served the traffic to the Mt. Alexander, Castlemaine, Maldon and Bendigo gold diggings.
